Pasta with Sausage and Kale – Kalyn’s Kitchen

I used Palmini pasta made with hearts of palm to make a low-carb version of this favorite pasta recipe with sausage and kale! This post has instructions for making it with regular pasta as well, so use whichever you prefer for this delicious pasta dish.

Years ago I came up with a recipe spaghetti With sausage and turnip It was so good that I declared it one of the best things I’ve ever made with kale. But even though it has a lot of sausage and kale and not a lot of pasta, it won’t work for anyone on a low-carb diet.

Then in January of this year, a reader named Daniel wrote to me about a new product called Palmini Pasta and it piqued my interest! I decided to test low-carb pasta on a recipe I knew I actually liked, and when we tested this recipe with Palmini Hearts of Palm Linguini, Kara I absolutely loved it! Since then, I’ve made some other delicious recipes using this great low carb pasta, so stay tuned for more recipes to come!

What is balamin pasta?

Balmini Pasta (affiliate link) This is a relatively new type of low-carb pasta made with hearts of palm. Pasta options are Linguini, Angel Hair (which actually looks like fluffy spaghetti), and lasagna. The same company also makes low carb rice and low carb mashed potatoes from hearts of palm, which I am looking forward to trying. Cara and I have enjoyed trying the Palmini pasta products, and we really love the taste of them. (And for anyone who might be wondering, this company didn’t send me any merchandise or pay me to display their products.)

Why is this a good recipe to make with Palmini Pasta?

The only thing people might have a problem with Palmini pasta is the price; Certainly it is much more expensive than regular pasta. That’s why we’re developing some recipes like this one, where there are a lot of other ingredients in the dish to spread the pasta. This pasta with sausage and kale makes six servings out of a single can of Palmini Linguini, making it affordable for everyone.

What ingredients do you need for this recipe?

How this recipe works:

  1. (If making with mini pasta) Drain the mini pasta in a colander set in the sink and rinse well with cold water.
  2. (If preparing with regular pasta) Cook pasta until fully cooked, following package directions. Reserve ½ cup of the pasta cooking water, then drain the pasta.
  3. Heat 1 ton of olive oil in a large heavy skillet, squeeze sausage out of casing, and cook until sausage is well browned, and comes apart with a stirrer while cooking. Transfer sausage to a bowl.
  4. While the sausage is cooking, wash the kale leaves and shake them to dry. Cut off the inner ribs, then kudey a stack of leaves and then chop them up, continuing until you’ve cut all the kale. (Sorry, you missed taking pictures of the chopped kale.)
  5. In the same large skillet, put the 3 tbsp olive oil, garlic, and chili flakes and cook until you no longer smell garlic.
  6. Then add the chopped turnip and cook for 2-3 minutes, flipping a few times, until the turnip is wilted.
  7. Add chicken broth, ground fennel, cooked sausage, and drained pelmeni pasta to turnips and bring to a simmer. Allow this mixture to boil for 8 minutes, or until the Palmini pasta looks tender when a piece is tested.
  8. (If using regular pasta, let the other ingredients cook for a few minutes before adding the pasta. Then gently fold the cooked pasta into the sausage/turnip mixture, and cook for 4-5 minutes. Add as much of the pasta cooking water as you think you need to be moist. )
  9. Add the Parmesan cheese and serve the pasta hot, adding Parmesan cheese to top the table if desired.
  10. This will keep well in the fridge for a few days, no matter what type of pasta you use.

Ingredients

  • 19.5 oz package hot turkey sausage
  • 1 bunch cabbage (see notes)
  • 1 ton minced garlic
  • 3 tons + 1 tons olive oil
  • 1/4 tsp. red pepper flakes (more or less to taste)
  • One 14.5 oz. 1 can of low-sodium chicken broth (see notes)
  • 1 tsp. ground fennel
  • One 14 oz. Can Palmini Hearts of Palm Linguini (or use 12 oz. pasta roti to make regular pasta)
  • 1/2 cup coarsely grated Parmesan cheese, plus more for serving

instructions

  1. (If making with mini pasta) Drain the mini pasta in a colander set in the sink and rinse well with cold water.
  2. (If making regular pasta) Fill a medium saucepan halfway with water, add plenty of salt, and bring the water to a boil. Add pasta, stir, reduce heat, and cook until almost done, following package directions for cooking times. Reserve ½ cup of the pasta cooking water, then drain the pasta.
  3. Heat 1 ton of olive oil in a large heavy skillet, squeeze sausage out of casing, and cook until sausage is well browned, and comes apart with a stirrer while cooking. Transfer sausage to a bowl.
  4. While the sausage is cooking, wash the kale leaves if necessary and shake them to dry (you don’t need to be completely dry). Cut the inner ribs if they are thick. Then stack a stack of leaves and then chop them up, continuing until you’ve cut all the kale.
  5. In the same large skillet that we cooked the sausage in, put the 3 tbsp of olive oil, garlic, and chili flakes. Turn it on over medium-low heat and cook it until you can barely smell the garlic. (Do not let garlic brown.)
  6. Then add chopped turnip. Cook the kale and garlic for 2-3 minutes, flipping a few times, until the kale is wilted.
  7. Add chickens Broth, ground fennel, cooked sausage, and drained balmini pasta to turnip and turn heat to low. Allow this mixture to boil for 8 minutes, or until the Palmini pasta looks tender when a piece is tested.
  8. (If using regular pasta, let the other ingredients cook for a few minutes before adding the pasta. Then gently fold the cooked pasta into the sausage/turnip mixture, adding as much pasta cooking water as you think you need to be moist enough.)
  9. Add the Parmesan cheese and serve the pasta hot, adding Parmesan cheese to top the table if desired.
  10. This will keep well in the fridge overnight, no matter what type of pasta you use.

Notes

We used about 8 cups of chopped kale. You can also use small turnips, which do not need to be cut.

Low Carb Diet / Low Glycemic Diet / South Beach Diet Suggestions:
Pasta with sausage and turnip with Palmini Pasta will be suitable for any low-carb diet, including Keto. Palmini pasta should be fine at any point in the original South Beach diet, but even with Italian sausage for turkey, this recipe might be a little too fat for South Beach.
