I made this with both types of fish years ago when my former neighbors Maria and Kim came over for dinner. I decided that this version needs a separate post, because I imagine some blog reader is looking at a file seafood recipes And pass the recipe straight on because it didn’t mention salmon in the title. I don’t claim that this is an original Korean recipe, but it does have a lot of the flavors found in Korean food. How to make Korean salmon in dipping sauce:

  1. If using frozen fish, thaw in the refrigerator overnight and then drain.

  3. Combine soy sauce, rice vinegar, sesame oil, sweeteners, garlic powder, Korean red pepper powder, and sliced ​​green onions.
  4. Divide the mixture in half to use one half for the marinade and the other half for the dipping sauce.
  5. Pat the salmon dry and place it in a ZipLoc bag or plastic container with an airtight lid. Pour the marinade into the bag along with the fish pieces and marinate in the refrigerator for about an hour (or it won’t hurt a little longer).
  6. When you’re ready to cook, remove the fish from the refrigerator, brush the top side with olive oil, and let the fish come to room temperature.
  7. Spray the grill with non-stick spray or wipe it with olive oil, then preheat the grill to medium-high heat (you can just hold your hand there 2-3 seconds).
  8. Place the salmon on the grill with the top side down and at an angle to grill the grates and grill for 2-3 minutes (until you can start to see grill marks).
  9. Carefully lift the fish to turn and rotate it to the opposite angle and cook for an additional 2-3 minutes for criss-crossing marks.
  10. Brush the other side of the salmon with more olive oil, then flip the salmon and let it cook for 3-4 minutes more or until the fish is firm.
  11. It’s easy to overcook salmon, and if you have it instant read meat thermometer (Continued link) I will use it and remove the salmon from the grill when it gets close to 130°F/55°C. The total cooking time will be no more than 8-10 minutes.
  12. Serve hot with dipping sauce on the side.
