It’s no secret that I love making easy recipes, and Keto Chicken Bacon Casserole is my new favorite recipe that I bring back over and over again.
I like to use leftover chicken and frozen broccoli in the recipe so I can stir it up and pop it in the oven in minutes.
Another time-saving tip is to prepare a batch (or several) of ranch dressing in advance. So, when I’m ready to cook, I take it out of the fridge and pour it into the dish.
Really, it would be hard to make this dish easier to prepare than it already is.

Recipe modifications and alternatives

However, not all components may be readily available to you. Or you may not care about all the ingredients and that’s okay!
There are a lot of substitutions and modifications you can make to this recipe, and it will still be absolutely delicious.
- You can use chicken thighs if you are not a fan of chicken breasts, or just chicken thighs in the freezer.

- You don’t have fresh broccoli or is it not available to you? Frozen broccoli works great. Simply defrost according to package instructions and drain well before adding to the casserole.
- Frozen cauliflower florets work great, too. You can use fresh or frozen cauliflower as well but be sure to use unbleached distilled cauliflower.

Ingredients
- 4 Chicken breasts (1.8 lbs or 800 grams) cooked and chopped
- 4 sliced bacon (4 oz or 112 grams) cooked
- 1 head of broccoli (1 lb or 450 grams), cut into small florets and steamed
- 1 tablespoon (1 gramFresh chopped parsley or coriander
- Avocado oil or coconut oil, for greasing a casserole dish
Ranch sauce:
- 1/2 cup (120 ml) unsweetened canned coconut milk
- 2 teaspoons (10 ml) apple cider vinegar
- 1/2 cup (120 ml) mayonnaise
- 2 tablespoons (2 gFresh parsley, finely chopped
- 1 teaspoon (3 ggarlic powder
- 1/2 teaspoon (1 gramOnion powder
- 1/2 teaspoon (3 g) salt
- 1/2 teaspoon (1 gram) black pepper
instructions
- Heat the oven to 350°F (180°C). Grease a casserole dish with avocado or coconut oil and set aside.
- Mix the coconut milk and apple cider vinegar together in a jar or bowl and leave for 10 minutes.
- In a blender or food processor, combine the coconut milk and vinegar mixture with remaining seasoning ingredients until emulsified. (Alternatively, whisk in a bowl until completely blended.)
- Add minced chicken breast, steamed broccoli, 3 slices of bacon, and fresh parsley or cilantro to the casserole.
- Add the ranch sauce to the tagine, and mix until well combined. Chop the rest of the bacon and sprinkle over it.
- Place the tagine in the oven and bake for 25 minutes, until golden and boiling.
- Remove the dish from the oven and let it cool for 5 minutes. Serve alone or with your favorite Keto side.
