Cucumber Salad with Parsley and Feta – Kalyn’s Kitchen

This simple cucumber salad with parsley and feta has some of my favorite ingredients, and this delicious salad is good any time of the year! But I love making it in the summer when I have parsley in my herb garden, and I really enjoy the salad with a generous amount of parsley!

I don’t remember where I originally found the idea for this Cucumber salad with parsley and feta, but it ended up being a combination of flavors I loved, and this summer when I had a lot of parsley in the garden, I decided to update the photos. I grew up with a mother who nibbled parsley off everyone’s plates when we went out to dinner, and as a child I couldn’t imagine why she wanted to eat it. But now I’m a fan of parsley! And I think it’s a kind of underappreciated herb, so I like to grow it My herbal garden And I love eating a salad like this that uses a lot of parsley.

I think simple cucumber salads like these make the perfect warm-weather lunch, or serve as a side dish for grilled meats.

What ingredients do you need for this recipe?

  • Garden option or European option
  • red onion
  • chopped parsley
  • crumbled feta cheese
  • Extra virgin olive oil
  • Fresh lemon juice, I used my own Fresh and frozen lemon juice
  • dried seasoning
  • Spike Seasoning, or another all-purpose spice mix
  • Freshly ground black pepper, to taste

What type of option will I use?

This salad is a great way to use cucumbers from the garden, but when I don’t have a garden cucumber, I use it Mild European cucumber.

What if you don’t like raw onions?

If you are not sure about raw red onions, Soak onions in cold water For a few minutes to remove part of the sting.

What kind of parsley did you use?

I’ve used flat Italian parsley from the garden for this, but I’m also a fan of curly parsley which is inexpensive and available year-round at any grocery store.

What other ingredients can be added to this salad?

This recipe can be varied in endless ways, as tomatoes, avocado, olives, capers, chili, mint, coriander, basil, and balsamic vinegar are some of the things that come to mind as potential alternatives or additions.

How to make cucumber salad with parsley and feta:

  1. Whisk the ingredients together to make the sauce.
  2. Chop the red onion into small pieces. (Soak onions in ice water for a few minutes, then drain well to get a mild onion flavor.)
  3. I left a strip of green when I peeled the cucumber. If the cucumber has large seeds, scrape them off with a spoon before slicing the cucumber.
  4. Cut the cucumber into quarters lengthwise, then cut it into small pieces.
  5. Wash the flat Italian parsley and pat dry or pat dry if necessary. Then chop the parsley coarsely.
  6. Break up the feta cheese, and I think more feta is always good!
  7. In a large bowl, combine the cucumber, onion, and parsley.
  8. Stir the sauce with the vegetable mixture.
  9. Add the feta cheese and mix gently.
  10. Season the salad with freshly ground black pepper, and serve.

ingredients

  • 3 European cucumbers (or use 4-5 garden cucumbers)
  • Half a small red onion
  • 1 cup chopped parsley
  • 3/4 cup crumbled feta cheese (or more)
  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice (more or less to taste)
  • 1/2 tsp. dried seasoning
  • 1/2 tsp. Spike Seasoning, or another all-purpose spice mix
  • Freshly ground black pepper, to taste

  1. Whisk olive oil, lemon juice, oregano, and spike seasoning together to make the sauce. If you’re not a big fan of lemons, use 2 tbsp of lemon juice and taste to see if you want more lemons.
  2. I cut the red onion into very small pieces. I like raw red onions, but you can soak the onions in cold water for a few minutes and drain well if you want a little more.
  3. I left a strip of green showing when I peeled the cucumber. If the cucumber has large seeds, scrape them off with a spoon before slicing the cucumber.
  4. I cut the partially peeled cucumbers into quarters lengthwise, then cut them into small pieces.
  5. Wash the flat Italian parsley and pat dry or pat dry if necessary. Then chop the parsley coarsely.
  6. Break up the feta cheese, and I think more feta is always good!
  7. In a large bowl, combine the cucumber, onion, and parsley.
  8. Stir the sauce with the vegetable mixture.
  9. Add the feta cheese and mix gently.
  10. Season the salad with freshly ground black pepper, and serve.
  11. This will keep in the fridge overnight, but I like it better when it’s fresh, so I’ll probably cut the recipe in half if you don’t eat that many servings.

You can also use a small Persian cucumber, or use a similar amount of fresh garden cucumber.
