This low-carb bacon frittata with two cheeses is easy and delicious that’s perfect for preparing a special breakfast. You can also make this with ham or Canadian bacon if you prefer!

I am happy to update the pictures for this Bacon Frittata with Cheese And this would be a hit with anyone who loves bacon! In this updated version, we used a combination of shredded mozzarella and goat cheese, for plenty of cheesy flavor. I first made the recipe with delicious, low-carb Canadian bacon, but over the years I’ve often made it with thicker strips of bacon, which is what I’ve used for these updated photos.

But of course you can make a delicious frittata with cooked bacon, Canadian bacon or diced ham, whichever you prefer! I hope you don’t skimp on the cheese or skip the green onions; These ingredients add tons of flavor to this delicious breakfast dish.

What ingredients do you need for this recipe?

  • Thick slices of bacon (or use chopped Canadian bacon or ham if you prefer)
  • green onion
  • shredded mozzarella cheese
  • Goat cheese
  • Spike seasoning (affiliate link) or other all-purpose spice blend
  • Salt and freshly ground black pepper to taste

What is goat cheese?

Goat cheese is a semi-soft, tart cream cheese made from goat’s milk. exist Many types of goat’s cheese, but use the goat cheese included in the registry for this recipe. This is often called a chevre.

What is Canadian Bacon?

What Americans call Canadian bacon is actually more like ham, a type of light-fat bacon made with pork. It’s also called Irish bacon, English bacon, or back bacon (and in Canada it’s just called bacon!) You can definitely make this recipe with Canadian bacon if you prefer. Bacon Frittata with Two Cheese Process Shots

How this recipe works:

  1. I used thicker strips of Costco bacon which have no added sugar. Cut the bacon into squares.
  2. I used a 10-inch William Sonoma Frittata skillet that I got as a gift, but any 10-inch nonstick skillet with a good lid will work. Use a pan that can be placed under the grill
  3. Heat the pan over medium heat and cook the bacon until very crisp; Then remove the bacon and lay it out on two layers of paper towels.
  4. Remove the bacon fat, reserving a tablespoon, turn off the heat, and wipe down the skillet. Spray the pan with nonstick spray if desired.
  5. Measure out the shredded mozzarella, goat cheese, and chopped green onions.
  6. Beat eggs until well blended.
  7. Turn the burner to medium, add the bacon fat (or olive oil), then cook the green onions for just 1 minute to release the flavors. Add the crunchy bacon to the skillet and stir to combine.
  8. Sprinkle both cheeses over the onion and green bacon mixture, season with spikey seasoning and pepper, then immediately pour over the scrambled eggs.
  9. Use a fork and gently “flip” to mix the ingredients.
  10. Cover the skillet and cook the frittata for 10-12 minutes over medium-low heat until the eggs begin to firm up and puff slightly. (Start preheating the broiler to brown the top of the frittata.)
  11. Remove the lid and place the frittata under the grill for a few minutes to brown the surface. (Be careful not to burn them, this only takes 2-3 minutes for most oven grills.)
  12. Cut the frittata into six pieces, sprinkle with green onions for garnish, and serve hot.

Ingredients

  • 3/4 cup shredded mozzarella cheese (see notes)
  • 4 oz. crumbled goat cheese
  • 1 tsp. Spike Seasoning (or more, see notes)
  • Salt and freshly ground black pepper to taste
  • 8 eggs, scrambled

  2. Use a 10-inch nonstick skillet with a good lid. Use a pan that can be placed under the grill
  3. Heat the pan over medium heat and cook the bacon until very crisp; Then remove the bacon from the pan and drain it on two layers of paper towels.
  4. Remove the bacon fat, reserving a tablespoon, turn off the heat, and wipe down the skillet. Spray the pan with nonstick spray if desired.
  5. Measure out the shredded mozzarella, goat cheese, and chopped green onions.
  6. Beat eggs until well blended.
  7. Turn the burner to medium, add 1 tablespoon of the bacon fat (or olive oil), then cook the green onions for just 1 minute to release the flavors.
  8. Add the crunchy bacon to the skillet and stir to combine.
  9. Sprinkle both cheeses over the onion and green bacon mixture, season with spikey seasoning and pepper, then immediately pour over the scrambled eggs.
  10. Use a fork and “stir” gently to mix the ingredients.
  11. Cover the pan and let the frittata cook for 10-12 minutes over medium-low heat, until the eggs are cooked and puffed slightly.
  12. While the frittata is cooking, start preheating the broiler to brown the top of the frittata.
  13. When the frittata is mostly set, turn off the burner and remove the lid.
  14. Place the frittata under the grill for a few minutes to brown the surface. (Be careful not to burn them, this only takes 2-3 minutes for most oven grills.)
  15. Cut the frittata into six pieces, sprinkle with green onions for garnish, and serve hot.

Notes

I used a 10 inch non-stick frittata pan to make this.

You can use Canadian bacon or minced ham in place of the bacon if you prefer. Use whatever cheese you like if you don’t have mozzarella or goat cheese. I love Spike seasoning (affiliate link) With eggs, but use whatever all-purpose seasoning mix you have on hand.

This recipe was first published in 2010 using Canadian Bacon. I’ve made it a few times since then, but mostly with regular bacon, and when I updated the recipe in 2021, I made it with slices of thicker Costco bacon.
